Pizzaiolo/Baker

The Position

• We are seeking a line cook with experience as a PIZZAIOLO / BAKER.
• Preparation, monitoring and management of precise dough making and proofing process for a variety of doughs with a focus on our sourdough breads and adjaruli khachapuri (cheeseboats).
• Implement pizzaiolo and/or bakery knowledge to prepare existing menu items such as adjaruli khachapuri (cheeseboats), megruli khachapuri (similar to Georgian pizza), penovani pastry puff dough khachapuri and focaccia. This includes shaping, forming, baking, plating and occasionally expediting khachapuri, breads and other menu items to our specified standards.
• Assist in the development of menu additions including traditional Georgian breads and dishes as well as new and innovative takes on Georgian classics.
• Occasionally support the line on other high quality menu items.

Qualifications

• Passion for and experience working with any of the following: pizzaiolo, baker, bread maker, sourdoughs, dough forming, viennese or pâtisserie.
• Experience with Georgian cuisine is a plus particularly in areas of breads, khachapuri and khinkali.
• Experience with dumpling doughs and pleating is a plus.
• Experience with Eastern European or central Asian cuisine such as pierogies, pelmeni and manti a plus.
• Excited about practicing your array of bakery knowledge.
• Excited to expand array of knowledge, experiment with new ideas, cuisines, dishes and techniques.

We are a Georgian restaurant inside of the Reading Terminal Market featured in Philadelphia Magazine, Eater, Thrillist and Philadelphia Inquirer. We are passionate about introducing cuisine from Georgia and the regions around Georgia to the Philadelphia food scene. Our focus lies on doughs and we are interested in expanding our bakery options with a focus on traditional and new items from Georgian, Eastern European and Central Asian bread culture. Our most popular items include our varieties of sourdough khachapuri adjaruli (or the famous cheeseboats), khinkali (oversized Georgian soup dumplings), and other varieties of bakery items.
