Head Pastry Production Manager
Okie Dokie Donuts is a high-volume, 100% gluten-free donut shop in South Philadelphia known for handmade production, creative output, and a growing savory and shipping program.
We are seeking a Head Pastry Production Manager to oversee daily pastry production and play a key role in the next phase of growth.
This is a hands-on leadership role in a working kitchen. The majority of time will be spent in production, with increasing responsibility for systems, team leadership, and structured menu development.
Position OverviewThe Head Pastry Production Manager will:
- Oversee and assist daily donut production (yeasted and cake)
- Execute and maintain established recipes to brand standards
- Manage pastry production schedules and prep systems
- Train and supervise pastry production staff
- Ensure consistency, speed, and quality across all pastry output
- Collaborate on structured rollout of specials and new products
- Lead daily production in a high-volume fryer-based environment
- Maintain strict recipe adherence and product consistency
- Identify and resolve production bottlenecks
- Ensure efficient station setup and workflow
- Maintain prep calendars and production forecasting
- Monitor ingredient inventory and order within budget
- Improve efficiency while preserving product quality
- Uphold food safety and cleanliness standards
- Train and oversee pastry production staff
- Set pace and tone during production shifts
- Provide feedback and maintain standards
- Participate in hiring and onboarding
Creativity and experimentation are important parts of Okie Dokie’s identity. The right candidate will have opportunities to contribute ideas and help shape weekly specials, seasonal menu development, and limited product releases.
We are especially interested in someone who enjoys balancing creativity with execution — developing ideas that can translate into consistent, high-quality production in a fast-paced environment.

- Assisting with seasonal menu ideas and retail concepts
- Helping translate creative ideas into repeatable production systems
This is a production-forward leadership role with meaningful creative contribution inside a structured operational environment.
Ideal Candidate- 2+ years professional pastry or high-volume baking experience
- Prior leadership experience strongly preferred
- Strong production efficiency and time management skills
- Comfortable with repetition and structured systems
- Experience in high-volume or fryer-based environments a plus
- Confident following and maintaining established recipes
- Ego-free, steady, and team-oriented
Gluten-free experience is a plus but not required.
CompensationSalary range: $45,000–$60,000 depending on pastry and leadership experience.
