About The Mill and Merc’sThe Mill is Philadelphia Country Club’s brand-new clubhouse concept, designed to bring a fresh, energetic, and elevated dining experience to our membership. Merc’s, our new pizza restaurant located inside The Mill, will feature house-made dough, carefully sourced ingredients, seasonal pizzas, and a brand-new Marra Forni oven.
Merc’s is built around craftsmanship, teamwork, and pride in the details. We are looking for cooks who are excited to be part of a new restaurant opening and who want to help build something from the ground up.
Position SummaryThe Pizza Cook is responsible for preparing, stretching, topping, and baking high-quality pizzas while maintaining the standards of Merc’s and Philadelphia Country Club. This position requires attention to detail, strong organization, and the ability to work efficiently in a fast-paced kitchen environment.
The ideal candidate has a passion for pizza, a respect for proper technique, and a willingness to learn. Experience with pizza dough, deck ovens, or wood/gas-fired ovens is preferred, but we are willing to train the right individual who brings a positive attitude, strong work ethic, and commitment to excellence.
Key Responsibilities
- Prepare and portion pizza dough according to house recipes and standards.
- Stretch, top, and bake pizzas consistently and efficiently during service.
- Operate and maintain the Marra Forni oven with care and attention to temperature, timing, and product quality.
- Prepare mise en place for pizza station, including sauces, cheeses, meats, vegetables, garnishes, and finishing ingredients.
- Maintain consistency in size, shape, bake, flavor, and presentation of all pizzas.
- Follow proper food handling, sanitation, labeling, dating, and storage procedures.
- Keep the pizza station clean, organized, stocked, and ready for service.
- Communicate clearly with chefs, fellow cooks, service staff, and expeditors.
- Assist with prep for additional menu items as needed.
- Support a team-first kitchen culture built on respect, urgency, accountability, and pride.
- Maintain high standards for cleanliness, food safety, and equipment care.
- Help contribute ideas and feedback as Merc’s continues to grow and develop.
Qualifications
- Previous kitchen experience required; pizza experience strongly preferred.
- Experience with hand-stretched dough, deck ovens, or high-temperature pizza ovens is a plus.
- Ability to work cleanly, efficiently, and with attention to detail.
- Strong sense of urgency and ability to work well under pressure.
- Willingness to learn, take feedback, and follow established standards.
- Ability to stand for long periods and lift up to 50 pounds.
- Availability to work nights, weekends, holidays, and peak club business periods.
- Professional attitude and commitment to teamwork.
- Has a genuine interest in pizza, dough, fermentation, and cooking technique.
- Takes pride in consistency and craftsmanship.
- Understands that every pizza represents the restaurant and the Club.
- Works well as part of a team and brings positive energy to the kitchen.
- Stays organized, clean, and focused during busy service.
- Wants to be part of a new restaurant opening and help shape the culture of Merc’s.
