Director of Bakery Operations - Full Time

We are searching for a Director of Bakery Operations who will lead high-volume production operations in a fast-paced environment. Key Responsibilities

• Direct daily high-volume wholesale artisan bread production supporting 300+ accounts and a growing client base.
• Oversee and optimize automated production lines, including mixing/forming machinery and packaging equipment.
• Lead, schedule, and develop a 30+ person bilingual production team.
• Own production planning, set output targets, and ensure consistency across recipes and delivery windows.
• Manage ingredient procurement, inventory control, cost management, and waste reduction initiatives.
• Maintain rigorous food safety, sanitation, and regulatory compliance (HACCP/SQF-aware).

Requirements

• Director-level or senior production leadership experience in a high-volume/wholesale bakery.
• Demonstrated expertise in artisan and naturally-leavened bread production at a commercial scale.
• Hands-on experience with bakery automation and packaging equipment.
• Proven leadership of large teams (30+); bilingual English/Spanish management experience is strongly preferred.
• ServSafe/food-safety certification; HACCP or SQF certification is a plus.
